Hello, friends! Today I want to tell you about a wonderful fruit that plays an important role in Italian and Jewish culture - Cedro. Cedro, also known as Citron, is a citrus fruit that grows in Calabria.
Cedro has a unique appearance with a large oval-shaped fruit and rough, uneven skin in bright yellow or greenish color. But the most fascinating thing about Cedro is its aroma! The peel contains a lot of essential oils that give the fruit an intense citrus scent, similar to lemon.
Cedro holds significant importance in Jewish culture. During the holiday of Sukkot, one of the major Jewish festivals, Cedro is used along with other tropical plants. It is waved and prayed over to connect with nature and the spiritual world.
Cedro is also widely used in culinary and food industry. It is transformed into various products that add a special flavor and aroma to dishes. Here are some of them:
Cedro products
Cedro Candito: It is a sweet delicacy made from the peel of Cedro, preserved in sugar syrup. Cedro candito is used in confectionery, desserts, and ice cream.
Cedro in Syrup: Pieces of Cedro fruit are preserved in syrup to retain their aroma and sweetness. They can be used in various desserts, salads, and beverages.
Cedro Liqueur: Cedro peel is used to make aromatic liqueur, which can be enjoyed on its own or used in cocktails.
Flavoring Ingredient: Cedro peel has a strong aroma that can be added to baked goods, desserts, salads, and other dishes for a citrusy twist.

Cedro recipes. Cedro Candito

Ingredients:
2 Cedro fruits
4 cups water
2 cups granulated sugar
Additional sugar for coating
Instructions:
Begin by washing the Cedro fruits thoroughly to remove any dirt or residue. Pat them dry with a clean towel.
Using a sharp knife, carefully cut off the ends of the Cedro fruits. Make lengthwise cuts along the skin, from top to bottom, without piercing the flesh. These cuts will help you remove the peel easily.
Gently peel off the thick skin of the Cedro fruits, being careful not to tear it. You should end up with strips of Cedro peel.
Slice the Cedro peel into thin strips or small cubes, whichever you prefer. Remove any remaining white pith as it can be bitter.
In a large pot, bring the water to a boil. Add the Cedro peel and let it simmer for about 10 minutes. This will help remove any bitterness from the peel.
Drain the water and repeat the boiling process two more times. This step is crucial to ensure the Cedro peel becomes tender.
In a separate pot, combine the sugar with 1 cup of water and bring it to a boil. Stir until the sugar has completely dissolved.
Add the boiled Cedro peel to the sugar syrup and let it simmer on low heat for about 1 hour, or until the peel becomes translucent and soft.
Once the Cedro peel is ready, remove it from the syrup and place it on a wire rack or parchment paper to dry slightly. This will take a few hours.
Roll the candied Cedro peel in granulated sugar to coat it completely. Shake off any excess sugar.
Store the Cedro Candito in an airtight container or jar, layered with parchment paper to prevent sticking. It can be stored at room temperature for several weeks.

Cedro recipes. Cedro liqueur

Ingredients:
2 Cedro fruits
2 cups vodka or grain alcohol
1 cup granulated sugar
1 cup water
Instructions:
Wash the Cedro fruits thoroughly to remove any dirt or residue. Pat them dry with a clean towel.
Using a sharp knife, carefully cut off the ends of the Cedro fruits. Make lengthwise cuts along the skin, from top to bottom, without piercing the flesh. These cuts will help you remove the peel easily.
Gently peel off the thick skin of the Cedro fruits, being careful not to tear it. Set aside the peel for later use.
Cut the Cedro fruit into small pieces, removing any seeds or pith.
Place the Cedro peel and fruit pieces in a clean glass jar or container.
Pour the vodka or grain alcohol over the Cedro peel and fruit, making sure they are fully submerged. Close the container tightly.
Store the jar in a cool, dark place for at least 10 days, shaking it gently every couple of days to help the flavors infuse.
After 10 days, prepare the syrup. In a saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves completely. Let the syrup cool.
Strain the Cedro-infused alcohol into a clean container, discarding the Cedro peel and fruit pieces.
Gradually add the cooled syrup to the Cedro-infused alcohol, tasting as you go to achieve your desired sweetness. Stir well to combine.
Once the Cedro Liqueur is well mixed, transfer it to a bottle or bottles for storage. Seal the bottles tightly.
Allow the Cedro Liqueur to rest for at least another week to further develop its flavors.
Your homemade Cedro Liqueur is now ready to be enjoyed! Serve it chilled, on the rocks, or use it as a flavorful addition to cocktails and desserts. Cheers!
